Speedy Tomato Prawn Pasta

A quick, healthy main dish that can be quickly put together post training. A good source of complex carbohydrates make it an excellent choice for a meal the night before a long run or hard workout.

Instructions
  1. Saute onion in olive oil for 5 minutes until it starts to soften
  2. Add in mushrooms and pepper and cook for a further 5 minutes
  3. Add in paprika, pepper and chilli powder (if using) and cook for a further 1-2 minutes
  4. Add in prawns, passata, tomato paste and oregano and bring to a simmer
  5. Simmer for 15 minutes until vegetables are cooked
  6. Meanwhile, cook pasta in a pan of boiled water for 10 minutes (or according to pack instructions)
  7. Remove sauce from heat and stir in soft cheese until well combined with tomato sauce
  8. Drain pasta and serve with sauce on top, and a little grated cheese, if liked
